Three pancake creations to fuel your fitness
Tuesday 21 February marks Shrove Tuesday, better known as Pancake Day in 2023 – so that means it’s time to make some crepes or pancakes!
We have compiled a list of healthy recipe options below, including a savoury pesto one to give you inspiration and food for thought.
Superfood Supreme
Make your pancakes ‘Superfood Supreme’ by serving with some of the finest superfoods around, creating a nice blend of berries, grains and yoghurt.
Try this super simple recipe from BBC Good Food or alternatively, these toppings work just as well using a packet mix for your pancakes or crepes.

Pesto Pile up
Have you ever tried a savoury pancake before? Our next suggestion – the pesto pile up – is a great and unusual option! This may sound controversial but hold your judgement until you have given it a try for yourself, it could well change the way you eat pancakes…
Green or red pesto from a jar is great or if you have a bit of time on your hands, why not make both the crepes and pesto from scratch?
Make this extra decadent by adding a little bit of mozzarella or sun-dried tomatoes or even a sprinkling of chilli flakes for an extra kick.
Vegan Pancakes
These dairy free pancakes are suitable for vegans but taste so good that non-vegans won’t feel like they are missing out! It’s not too late to Veganuary…
Ingredients
- 300g self-raising flour
- 1 tablespoon baking powder
- 1 tablespoon any sugar
- 1 tablespoon vanilla extract
- 400ml plant-based milk
- 1 tablespoon vegetable oil
Method
Whisk the flour, baking powder, sugar and vanilla extract in a bowl with a balloon whisk, and add a pinch of salt while mixing. Start slowly pouring in the milk and whisking until you are left with a smooth and combined batter.
Heat a little oil in a frying pan over a medium-low heat. Add 2-3 tablespoons of batter into the pan at a time to make the size of pancakes you desire. Cook for 3-4 minutes until the edges are set and bubbles begin to appear on the surface. Then flip the pancakes over and allow the reverse to cook for 2-3 minutes until golden brown.
Once you have used up all the mixture, serve with toppings we recommended earlier or choose your own. Vegan substitutes for ingredients in the previous suggestions can easily be found and used if you wish to keep your crepe 100% plant-based.
